Caramelized Applesauce with Pecans and Golden Raisins
The secret ingredient in this decadent applesauce, the butter, is a French tradition that adds richness and heightens the flavor of the fruit and nuts. The sauce is terrific on its own, or use it as a filling for crepes and tarts or a topping for ice cream.
1/3 cup golden raisins 3 tablespoons cognac, brandy or apple juice 2 lb. Pink Lady, McIntosh or other soft cooking apples, peeled, coarsely chopped (generous 6 cups) 1/2 to 2/3 cup sugar (depending on tartness of apples) 1/4 cup orange juice 2 tablespoons unsalted butter, divided 1 tablespoon grated orange peel 2 teaspoons pumpkin pie spice Dash salt 3/4 cup pecan halves, toasted, coarsely chopped*
1. Soak raisins in cognac in small bowl.
2. Meanwhile, bring all remaining ingredients except 1 tablespoon of the butter and pecans to a boil in large saucepan. Reduce heat to medium-low; simmer 3 minutes, stirring occasionally. Cover and cook over medium-low heat 20 to 25 minutes or until apples are very soft, stirring occasionally.
3. Increase heat to medium. Add remaining 1 tablespoon butter; cook, uncovered, 5 to 8 minutes or until apples are light brown and caramelized, stirring frequently. Stir in raisins and pecans; cook 1 minute. Serve warm or cool completely. Cover and store in refrigerator.
TIP *To toast pecans, place on baking sheet; bake at 375°F. for 4 to 6 minutes or until slightly darker in color. Cool.

I stole this one from Paula Deen. One of my favorite things to make over the holidays.
Sausage Balls * 1 (1-pound) package ground sausage * 3 cups baking mix (recommended: Bisquick) * 4 cups grated sharp Cheddar * 1/8 tablespoon pepper Directions Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable oil cooking spray (I use a nonstick baking sheet). Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be very crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls. Place the balls on the baking sheet. Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking.
Does anyone have the chocolate lava cookie recipe? I don't even know what they're really called, but they're chocolate and when you take them out of the oven, they look like they've cracked open and then you sprinkle powdered sugar over them. Anyone know what I'm talking about?

Nicci are they PD cookies? If so, hers are called Ooey Gooey Choclate cookies, or something like that. I made some about a month ago, and I'm pretty sure you mix a cake mix, a stick of butter, and a thing of cream cheese, a tsp of vanilla together then refridgerate for 2 hours before rolling into balls and rolling in powdered sugar before baking. But don't take my word for it! The only place I could find her recipe is on HER website, search for ooey gooey!

Nicci I have Paula Deens recipe for Double Chocolate Gooey Butter Cake. Do you think the cookies are made the same way? What Nancy described is exactly like the cake. I make the cake for all holidays and it is super good!

I'm wondering if they're made with the same thing, you just put the dough onto a cookie sheet instead of in a cake pan. I looked up the recipe on her website and it sure does sound tasty. I'll probably try it out next week at some point.

about the sausage balls...i think these are way better than paula deen's...not to offend anyone...
2 cups light bisquik (or the regular...doesn't matter) 2 rolls of sausage (i prefer tennesee pride brand and get hot sausage for the best!!!!) 1 bag of kraft finely shredded sharp cheddar---the 3 cup bag
mix all ingredients in a bowl until completely mixed. lay your sausage and cheese out for a while so it's not so cold since you'll be using your hands to mix the ingredients. roll into balls and place on a cookie sheet (spray it with pam). bake at 375 for 10-15 minutes (bottoms need to be brown and crispy). these will be the BEST sausage balls you've ever ate---promise, promise!

Ashley- Thanks for posting that! These look to be a little less calorific, if you get my drift. I love Paula, don't get me wrong, but good-bye diet when I bake her stuff. ;D

Simple Italian Pasta Salad
1 box of Rotini Noodles 1 can of English peas Grated Parmesean Cheese Kraft Light - House Italian Dressing 1 sm. can of black olives (optional)
Cook pasta according to box directions. Drain and return to pot or serving bowl. Drain peas, rinse, and add to pasta. Mix well (peas will fall to bottom) Drain olives, rinse (if in oil), and add to pasta. Mix well. Liberally cover top surface with parmesean cheese. Mix well. Drizzle Italian dressing, mixing intermittently until pasta is well covered (not saturated). It might take half of the bottle, if that much.
Serve hot or cold. Great side dish for luncheons.

I love this and had to dig up this thread to share. I hate avocado and onion (esp raw) but his salsa is fantastic!
Black Bean Salsa Ingredients: 2 medium-size ripe avocados, cubed 1 can black beans, rinsed and drained 1 can White corn, rinsed and drained 1 fresh jalapeño pepper, seeded and diced (leave out if you don’t like spicy) 1/3 cup chopped red onion 3 Tbsp. fresh lime juice ½ tsp. salt ½ tsp. ground cumin ¼ tsp. ground red pepper 2 medium ripe tomatoes, diced (optional) Cilantro, one handful chopped Directions: 1. Stir all ingredients together gently in a large bowl. 2. Serve with baked pita chips or tortilla chips. 3. Or top grilled chicken or burger with this salsa instead of normal toppings.
