Finally, I had the time to make 2 batches and post this! I wanted to take pictures, but of course my camera battery is dead so you'll have to make them yourself to see how yummy they look/taste!
Potato Chip Cookies
1/2 cup finely crushed potato chips 1/2 cup finely ground pecans (I use a food processor for both the pecans and potato chips, separately) 1 1/2 cup flour 1/2 cup sugar 1 cup butter 1 teaspoon vanilla extract 1 egg yolk powdered sugar
Preheat the oven to 350 degrees. Combine the potato chips, pecans and flour in a bowl. In another bowl, beat the butter and sugar until it's fluffy. Beat in the vanilla and egg yolk. Combine the 2 mixtures until well integrated. Roll the dough into 1 inch balls and place them onto a nonstick cookie sheet. Bake for 15-20 minutes, until they are just starting to brown on the bottom. (In my oven they take closer to 20 mins) Allow them to cool and sprinkle them lightly with powdered sugar if you would like; I only use the powdered sugar when I am bringing them somewhere for pretty presentation. Enjoy!

Bump for the recipe posted. Jamie- Although you can't really taste the salty, there's something that keeps you coming back for more and that's the chips

Yay! Thanks, Jen! Do you think they would still turn out well minus the pecans? I'm not very fond of nuts in cookies! lol

I don't really think they would get the right texture/taste without them, but you could try! Honestly, I hate nuts and I love these cookies. You have to process them until they're super fine so they aren't really noticable
